Mexican Street Corn Salad

From Liz Call - 18th Ward
  • 4 cups sweet corn (6-8 ears fresh corn or 4 cups frozen corn)
  • ½ cup mayo
  • 2 TBL butter
  • 2 tsp lime juice
  • 4 green onions
  • ¼ cup cotija cheese
  • ½ tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp sugar
  • cilantro leaves for garnish
Instructions
  1. Cook the corn. You can either add 4 cups of frozen corn to a large skillet and warm on medium high heat until corn is cooked and there is a bit of char on it. Or cook 6-8 fresh ears of corn in boiling water, then sear them on a barbcue grill for a few minutes to get some char marks, then cut the corn off the cob.
  2. Add cooked corn to a medium bowl.
  3. In a bowl, melt butter in microwave.
  4. Chop green onions (only want to include the green part, not the white).
  5. Add mayo, spices, green onions, lime juice, and 1-2 T. of cheese to the melted butter and stir until all combined.
  6. Pour mixture over cooked corn and stir until all combined.
  7. Add remaining cheese and a few chopped cilantro leaves on top to garnish and to serve.
  8. **NOTE: I don't love cilantro, but if you do, you can always add more than just a few leaves. Just be careful to not overpower the flavor with cilantro.

7-UP Jello Salad

I found this on Family Heritage Recipes.    It was a recipe that ran the course for a few years in Relief Society in the 50's and 60's.    My mother made it quite often. I'd forgotten about it.   I may have the other recipe my mom had on this site also.

~~~~~~~~~~~~~~
1 (6 oz.) pkg. lemon Jell-O
2 cups hot water
2 cups 7-Up
1 can crushed pineapple, drained
1 cup miniature marshmallows
3 sliced bananas
Dissolve Jell-O in water. Add 7-Up. Refrigerate until soft set. Stir in pineapple, marshmallows, and bananas.
Refrigerate.
Topping:
½ cup pineapple juice
½ cup frozen orange juice concentrate
¼ cup flour
4 Tb. butter
2 eggs
1 cup whipped topping
Mix all the ingredients except whipped topping in a saucepan and cook over low heat, stirring constantly, until thickened. Cool. Fold in whipped topping. Spread on Jell-O and refrigerate.
Summer Salad from Denise
3 small Persian cucumbers or garden cucumbers
1 cup diced tomato or cherry tomatoes
1/4 cup thinly sliced green onion or thinly sliced sweet onion (or more)
1 avocado
2 teaspoons fresh lemon juice (optional, for tossing with avocado)
1 tablespoon good quality balsamic vinegar
Sea salt and fresh ground black pepper to taste
Cut cucumbers in thin slices. I always peel mine but it's entirely up to you. Dice tomatoes or cut cherry tomatoes in half to make one cup. (Only make this salad when you know the tomatoes are at their best in taste. I bought Roma grape tomatoes and they were delicious and sweet). Add the sliced green onions or sliced sweet onion. Peel and cut up the avocado into small cubes.
Combine the cucumber, tomato, onion and avocado in a plastic or glass bowl and gently toss together. Add the tablespoon of balsamic vinegar. Season to taste with your favorite sea salt and plenty of fresh-ground black pepper.
If you have any left-over salad and haven't already done so, toss the avocado with a few teaspoons of fresh lemon juice to stop it from going brown. This is best when it is freshly made.
Taco Salad
From Carol Frandsen - friend in Denver 16th Ward in Lakewood, Colorado
__
1 pound ground beef
1 can of red kidney beans drained
1 head of lettuce chopped up
1 package original Doritos chips
3-4 large tomatoes - diced
1 large avocado chopped
grated cheese to taste
3-4 tablespoons mayonnaise
1/3 cup taco sauce or to taste
Brown ground beef, drain, add drained kidney beans.
Simmer about ten minutes.
Shred lettuce, diced tomatoes, mashed corn ships, cheese grated, and diced avocado.
Mix mayonnaise to above.
Add ground beef and kidney beats.
Toss salad.
I like to put the avocado on separately instead of putting it into the salad and have it go brown.
